[Butternut squash soup]
I made butternut squash soup tonight. Since I don’t have a blender, I simply sautéd it and smashed it by a spoon and a fork.
It came out pretty creamy.
I added some salt and pepper to taste. At my first bowl, I put some shredded cheese in it. It was good but sticky. For my second bowl, I tried to add some “Everything but the bagel” which I bought from Trader Joe’s. This one went along very well with the soup.
My husband doesn’t like this kind of texture. He got something else to eat. My friend had told me it was kind of “baby food.” I am a vivid fan of baby food texture. Haha!
I ate the whole pot of soup by myself and I found out that maybe I am not a fan of butternut squash.
Don’t get me wrong. It was delicious. I just got a not so good feeling at my last bowl. Maybe I was overwhelmed by eating it all at once.

10/16 is a day to remember. We met each other on this day eight years ago.
I realize one of the most important things in our relationship is we both enjoy a simple lifestyle. And no matter what happened, we kept the same faith.
I made roasted spaghetti squash for the first time for our 8th anniversary dinner. Not fancy, but it was new and healthy. I appreciated that my husband liked it very much and he appreciated me for cooking.
One of my happiest moments is eating with my husband.😊
